More than 100 varieties of olive trees are cultivated in France. They are endemics to the South of France and even often specific to a particular soil.
Cultivated with patience and passion, these trees give olives which, prepared with care, develop unique subtle aromas. Oils stemming from them concentrate all the aromas and the sun of the South of France and can be used with a disconcerting ease!


Aglandau or Verdale de Carpentrasaglandau

Cultivation area : Bouches-du-Rhône, Vaucluse, Alpes de Haute-Provence, and in a small extent Var, Gard, Hérault, Aude, Drôme.
Uses : olive oil from a monovariety or in combination with other varieties. This is one of the main variety authorized in Vallée des Baux-de-Provence PDO, Aix-en-Provence PDO, Haute-Provence PDO (minimum of 80%) and in Provence PDO. As Béruguette, it can be used for Vallée des Baux-de-Provence PDO broken olive.
Characteristic of the olive oil : olive oil with dominant artichoke, almond and sometimes pear aromas, with more or less intense bitterness and piquant.


Grossanegrossane

Cultivation area : Bouches-du-Rhône, Var, Gard.
Uses : Vallée des Baux-de-Provence PDO black olives, olive oil from a monovariety or in combination with other varieties. This is one of the main variety authorized in Vallée des Baux-de-Provence PDO.
Characteristic of the olive oil : olive oil with light fruity taste, grapefruit and tomato aromas, without piquant or bitterness. In black fruity taste, it contributes to spice up the aromatic set of a combination of varieties with candy fruits and jam notes.


Salonenquesalonenque

Cultivation area : Bouches-du-Rhône, Var.
Uses : Vallée des Baux-de-provence PDO broken olives, olive oil from a monovariety or in combination with other varieties. This is one of the main variety authorized in Vallée des Baux-de-Provence PDO and Aix-en-Provence PDO.
Characteristic of the olive oil : olive oil with artichoke, hazelnut and apple aromas, with pronounced herbaceous notes.


Bouteillanbouteillan

Cultivation area : Var, Bouches-du-Rhône, Alpes de Haute-Provence, Gard, Hérault, Aude.
Uses : olive oil from a monovariety or in combination with other regional varieties.
Characteristic of the olive oil : olive oil going from intense herbaceous to ripe pear aromas, according to the degree of maturation.


Cailletiercailletier

Cultivation area : Alpes-Maritimes, Var (east), Alpes de Haute-Provence (south-east).
Uses : Nice PDO olive, olive oil from a monovariety or in combination with other varieties. This is the main variety authorized in Nice PDO olive oil (more than 95%).
Characteristic of the olive oil : soft olive oil with intense fresh almond aromas accompanied by broom and raw artichoke.


Tanchetanche

Cultivation area : Drôme, Vaucluse (nord), Alpes de Haute-Provence.
Uses : Nyons PDO black olives, olive oil from a monovariety or in combination with other varieties. This is the main variety authorized in Nyons PDO olive oil (more than 95%).
Characteristic of the olive oil : soft olive oil with very intense fresh almond and apple aromas, very light bitterness, buttered sensation in the mouth according to the olive maturity.


Picholinepicholine

Cultivation area : Gard, Corse, Hérault, Aude, Pyrénées-Orientales, Bouches-du-Rhône, Vaucluse, Var, Alpes de Haute-Provence.
Uses : Nîmes PDO green olives, Nîmes PDO olive oil, olive oil from a monovariety or in combination with other varieties.
Characteristic of the olive oil : olive oil with relative piquant, sometimes with dominant plum, exotic fruits, greenery and vanilla aromas, light to pronounced bitterness.


Lucqueslucques

Cultivation area : Hérault, Aude, Pyrénées-Orientales, Gard.
Uses : green olives, Nîmes PDO olive oil, olive oil from a monovariety or in combination with other varieties.
Characteristic of the olive oil : light and soft olive oil with subtle dried fruits aromas.


Petit Ribierpetit-ribier

Cultivation area : Var, Alpes-Maritimes.
Uses : olive oil from a monovariety or in combination with other regional varieties.
Characteristic of the olive oil : piquant olive oil with berries, artichoke and greenery aromas.
